Highly prized across Bangladesh and eastern India, Shoil is celebrated for its incredibly firm, meaty texture and deeply savory flavor. Unlike softer river fish that might dissolve during a long simmer, Shoil is remarkably robust, holding up perfectly in heavy, vibrantly spiced stews and gravies. This massive 1 to 1.2 kilogram grade yields spectacularly thick, steak-like cuts that boast a distinct, sweet-yet-earthy flavor profile. Containing very few small bones, it is exceptionally satisfying to eat and perfect for sharing among a large crowd. Specifically sourced for expansive family dinners, community banquets, or serious meal prep, this whole fish is cleaned, prepped, and flash-frozen to preserve its natural firmness, ensuring you can effortlessly recreate grand, authentic homestyle cooking right in your Japanese kitchen.
Firm, Meaty Texture: Unlike delicate river fish, Shoil features a dense, steak-like texture that refuses to fall apart, making it the absolute ultimate choice for slow-simmered, rich curries.
Massive Banquet Size: Weighing 1000 to 1200 grams, this colossal catch allows you to cut massive, meaty steaks that are perfect for serving a large family, hosting weekend parties, or batch-cooking for the week.
Low-Bone Structure: Primarily structured around a single, thick central bone with very few annoying pin-bones, making it a stress-free, highly enjoyable, and safe eating experience for all ages.
Exceptional Flavor Absorber: The robust flesh acts as a perfect sponge, beautifully soaking up the pungent, aromatic flavors of mustard oil, ginger, garlic, and fiery masala spices.
100% Halal-Friendly & Clean: Responsibly sourced from clean freshwaters, hygienically processed, and rapidly flash-frozen at peak freshness to ensure absolute dietary compliance.

Shoil (Snakehead) is renowned for having a deeply savory, slightly earthy, and inherently sweet flavor. However, its defining characteristic is its texture; it is incredibly meaty, firm, and dense compared to the softer, flakier texture of fish like Rohu or Tilapia.
No, the bone structure remains exactly the same, which is a major advantage. In fact, many people prefer this massive 1kg+ size because the central spine is much larger and easier to navigate, and the resulting steaks have an incredibly high ratio of solid meat to bone.
Because this fish yields thick, heavy steaks, it is spectacular when prepared as a rich, robust curry (Shoil Macher Bhuna or Kalia). Cut the thawed fish into thick slices, rub them with turmeric and salt, and lightly shallow-fry them in oil to seal the exterior. Then, simmer the fried pieces in a heavy, caramelized gravy base made of onions, tomatoes, ginger, garlic, and cumin.
Because this fish is extraordinarily thick and heavy, it requires patience to defrost properly without ruining the flesh. Never use a microwave. The absolute safest method is to transfer the frozen fish to your refrigerator 24 to 36 hours before you plan to cook it, allowing it to thaw gently and evenly. If you are in a rush, keep the fish in its completely sealed plastic bag and submerge it in a large basin of cold tap water, changing the water every 30 minutes, until it is fully defrosted (usually 2 to 3 hours).
